To my konwledge is like this:

Incapacitate: To render uncounsius or unable to move, fight, not dead. eg, Bob slipped and hit his head, knocking him sensless instantly.

Incapacitated: Uncounsius or unable to move, fight, not dead.

Incapacitating: Rendering someone uncousis or unable to fight.

This is opposed to, well Dead.

Dead: No breath, heartbeat, all bodily systems are not functioning and very likely won't ever again. eg. Bob slipped on the wet floor and cracked his head in moment he was dead.
